Really???

Yes really, I have the best husband in the world. I would like to say thank you to him for taking his long weekend to work on the nursery. There may be water works in the near future. He has made three trips to lowes, and two of those were today. We have also changed directions in the nursery and are going to have the room carpeted. Lord knows that this has been a trying weekend for Bert. Every time he starts a project something else falls through. thankfully I have been at Dad's "on vacation" pretty much out of the way but man do I feel useless. He is busting his butt and my butt has been floating in the pool. Please pray for him that his patience and energy will hold out.

Not much today...

Well not much to say today. Got a lot to do today but I have got to get a little rest before I go to work tonight. I am pricing all the garage sale stuff while my little fuzzy monster is at the groomers getting a much needed bath and Mani-pedi!!! Man did she ever need those toenails cut. Trying to get as much done before the weekend. Poor Bert is going to try and get the baby room ready for furniture. I am trying to get as much out of the way as possible but I sure am slow! There will be no recipes this weekend because I am being banned to the Paw Paw Hilton due to the carpet ripping and painting that is planned for my house. I will be being a lazy pregnant lady of leisure. Should you need me this weekend check the pool at Daddy's, If I am not there then I will be on the couch watching the unlimited cable on the big screen!

Progress? Recipe: Tater Tot Casserole

Well it is official, We have worked each other to death! We can see the progress from our weekend of cleaning out and can I just ask...How do two people accumulate so much JUNK??? We had a garage sale about three years ago and thought that we got rid of a lot, but to our surprise we have enough crap to fill another small house. We are planning a garage sale for the first weekend in June with lots of goodies in the hope to make a little extra for Lyndee's room. Bert is on the couch and I am heading there shortly. Tater tot casserole for dinner and maybe an extra early bed time.

Tater Tot Casserole:

2# ground beef
1 small onion finely chopped
8 oz sour cream
2 T Worcestershire sauce
1 can cream of mushroom soup
1 bag tater tots
salt, pepper and garlic powder to taste
2 cups sharp cheddar cheese (you can use mild if you like)

Preheat the oven to 350 degrees. Brown ground meat and onion together and drain off any grease. Spray a 9x13 pan with non- stick spray and put ground meat and onions in a layer on the bottom. Mix next three ingredients and salt, pepper and garlic. Put Tots over meat in a single layer. Pour soup mixture over top of tots. Top with cheese. Cover with foil and bake 40 minutes then remove the foil and continue to bake until cheese is golden and bubbly. (About 15 min) let set about 10 minutes before you serve it.

Great with a side salad or with English peas.

***Note: Aimee's crew has a mushroom allergy so she substitutes the cream of mushroom with cream of chicken and it is still really good.

Big plans...not much motivation!

So I believe that anyone that knows me knows that I am a good nurse but a horrible housekeeper! I HATE to keep house! We have made big plans for the weekend to literally dig out our front bedroom so that next weekend it can be transformed into the Nursery for Lyndee. I would rather take a beating than have to clean out. Bert is motivated so I guess I better get that way. I know that it is all for my precious angel, but I truly dread it!.

Better Day...

Well, today is a better day. I am more positive today. I guess we all need a day of grief every now and again. Hope this finds all well. I am working on a new menu plan and will post details soon. Hope to fill it with good recipes and healthy alternatives. If anyone has any good ideas let me know. As for now I guess it will be Hamburger Helper since I am here until 7pm.

Bittersweet Day...

Today has been an extremely hard day but a wonderful day too. Today is my Mother's birthday. She would have been 56. She was a gracious and loving woman with a spirit for life and a great love for the Lord and her family. She was a Mother, a mentor, a friend, a shoulder to cry on and the one person I could count on without a doubt until I met Bert. My mother raised me to be quiet when appropriate but also that I had a voice and no one could take that from me. I hope that one day that I can be half the woman that she was. She raised me to trust in the Lord and to follow a path of faith and love with forgiveness. I miss her every day but days like today are harder because she is not here for me to call with an update on the baby.

Our doctor's appointment went well. Lyndee is growing and now weighs in at 12 oz. I am 21 weeks and am doing well. I have only gained 10 pounds and my blood sugar and blood pressure are both under control. I am so extremely blessed to be experiencing motherhood and parenthood with the man that has been my rock, Momma called him her "Bert Baby". I know that she would be so excited and proud. I just wish that she was here to share it with us.

Momma I love you and understand that you cannot be here but it still hurts to know that my baby will never know the love of such a wonderful Nanny. I love you now and forever. Watch over us in our journey as I know you do.

What a week!

What a week is so way beyond what this week has been! We have been so busy I am just glad Bert is home and we are finally resting! He flew out to San Diego Tuesday for a furniture show and got stuck in Memphis and Laid over in Minneapolis not getting to San Diego until 11pm our time, he left home at 5am! Then on the way back got stuck in Atlanta, can we say tired and a little CRANKY! I traveled to Jackson Wednesday for a class only to find out that I knew what they were teaching in that class and needed to be at the Thursday and Friday classes that I was told to not go to!

I had a few minutes in Jackson so I started the baby registry...Can we say so not prepared!!!!! I did not realize that there are 4,000 brands of bottles about that many kinds of strollers and car seats and wait for this...Breast Pumps are $300!!!!! Really..I did find the funniest thing though, a baby jacuzzi!!! You put the baby in it and it does bubbles like a hot tub, so cute. Now I am registered at Babies R Us and Target but man I saw so much stuff I don't know what to register for and what not to register for.

So now it is Saturday morning, Bert is still sleeping, I have done some house cleaning and we have plans to work in the soon to be nursery. I also have plans for a great steak and potato supper tonight. We need a good home cooked meal and some time together. Hope everyone has a great weekend!

Time to get started.

So I started this blog with the intent to talk about my passion for food. Well I still have a passion for food however I have a new passion these days...Motherhood. For all those unaware, Bert and I found out that I am Pregnant on January 17, 2011. We have wanted a child but until now had not been blessed. I am now a healthy 20 weeks and counting, Due to deliver around the 23rd of September. Now I am truly nursing the foodie to be in me! I am so very excited and now that I am over the ridiculous morning sickness I am ready to enjoy food with new passion, not just the taste but the nutrition it will bring to my Baby Girl. So to all the foodies, friends, mommies and mommies to be, join me on a trip with food. I will try anything and am always open to suggestions. Let's have fun with food!
